In day and week mode, does it have to be a 15 minute interval?

No. By default, the interval is always 15 minutes.
From the Control Panel go to Configure Preferences.
Select 'Duration of slot (day/week) view' under the Calendar Display Features section and type in the number of minutes
you want to make your interval for both the day & week view.
